This Week’s Supper Ingredients
Burrata is easily one of my favorite cheeses. So much so that when I’m at the market and see only four remaining containers panic sets in forcing me to buy them all!
Artichokes are another love for me although, I do not have fond memories of some of their cousins when I was a child. On the up-side, I find them visually stunning while growing in the garden and I love the nuttiness they provide when roasted. What I find most unique about artichokes however is that they are actually a thistle! What I typically associate with thistles is pain as I used to walk the fields of our farm as a young girl (always barefoot of course!) and would let many an “ouch,” fly as thistles mercilessly impaled my feet! Most often I will steam these beauties and serve them alongside endless varieties of aioli and a crisp rosé thus, making “Rosé All Day” an epic companion with “Artichokes All Day!”
My final ingredient is fresh mint. Vibrant green, easy to grow, inexpensive, and a surprising addition that often provides that sense of freshness that perfectly rounds out a dish that would otherwise be the dreaded “one note.”
