I love a good marinade and this is a good marinade! Packed full of sweet and spicy flavor that does its job while you are at yours or while you dream sweet dreams of steak and a cold beer!
This gochujang marinated skirt steak cooks in just 6 minutes and rests for 5 while you make your pretty darn amazing side. Glazed with a combo of spicy gochugaru (Korean chili flakes), sweet brown sugar, and salty soy sauce then tossed on the grill to add some char. These spicy glazed baby bok choy are going to be a mainstay grillin vedge!
And because its fun to dip I have a ginger gochujang sauce to serve alongside this flavor bomb!

Gochujang marinated skirt steak grilled and served with spicy glazed baby bok choy. Accompanied by a ginger gochujang sauce.
- 2 tablespoons gochujang
- 1 tablespoon fresh ginger grated
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon brown sugar
- 1/4 cup soy sauce
- 2 teaspoons sesame oil
- 2 lbs skirt steak trimmed
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 3 tablespoons fresh cilantro
- 1.5 teaspoons fresh ginger grated
- 1/4 teaspoon kosher salt
- 2.5 tablespoons gochujang
- 2 teaspoons lime juice fresh
- 2 teaspoons gochugaru chili flakes
- 2 teaspoons sesame oil
- 1 teaspoon brown sugar
- 2 tablespoons soy sauce
- 4 heads baby bok choy quartered
- 2 scallions chopped

In leak proof container combine all of the marinade ingredients. Add skirt steak to marinade and toss lightly to coat. Place in refrigerator over night or at least 6 hours.

In bowl of food processor add all of the sauce ingredients. Pulse until smooth and well combined. Place in refrigerator until ready to serve.

Lightly oil grill grates. Preheat grill to high heat. Grill steak 3 minutes each side or until preferred doneness is achieved. Remove from grill to rest while you prepare baby bok choy. Leave grill on and decrease heat to medium.

In small bowl whisk together gochugaru, sesame oil, brown sugar and soy sauce. Brush cut sides of bok choy with mixture. Grill for 3-4 minutes until just softened and lightly charred.

Slice rested steak across the grain and top with scallions. Serve sauce and baby bok chop along side.
