Peach Sweet Tea Ice Cream

I received the wife of the weekend award with this one!  Half of the ice cream was eaten before it even hit the bowl so I knew it was a winner.  The herbal notes of the mint are subtle while the tea and peach coming running full force at your tastebuds.  I hope you enjoy this summer treat on your front porch, back yard, or even sitting on your couch while you Netflix and chill!  Let me know what you think and I hope you love it 🙂

Summer peaches and sweet tea guild the lily of creamy ice cream. Fireflies and front porch nights are now even better!

Ingredients
  • 1/2 cup water
  • 3 iced tea bags cold brew
  • 1 1/4 cup heavy cream
  • 1/4 cup fresh mint
  • 5 cups peaches peeled and sliced
  • 3/4 cup granulated sugar
Instructions
  1. In small bowl add 1/2 cup cold water and tea bags.  Steep for 3 minutes and discard tea bags.  set aside

  2. In medium sized microwave safe bowl combine heavy cream with mint.  Microwave for 1 minute.  Remove from microwave and allow to steep while you cook peaches.

  3. In medium sized saucepan over medium heat cook peaches, sugar, and tea for 15 minutes until sugar is dissolved and peaches are broken down.  Remove from heat.  Strain cream and stir into peach mixture. Blend mixture and strain discarding solids.  Place in refrigerator to cool for 4 hours.

  4. Churn in ice cream maker according to manufacturers instructions.  Serve immediately or store in the freezer.

Recipe Notes

Be careful when blending warm ingredients.  I usually use a stick blender as it is easier and there is no worry of the lid popping off and spraying hot liquid all over 🙂
