Strawberry Shrub
The first time I tasted a shrub was in Williamsburg, VA while in town celebrating the 4th Of July. If you are able to pop on down to Williamsburg it is a beautiful historic town and their Independence Day celebration is awesome! I would have never imagined pairing vinegar in a cocktail but it is amazing! A little tart, a little sweet, spicy, and ginny ( yes I know that is not the proper use of the word but it works here) 🙂 I hope every one can sit back and enjoy this beautiful drink with family, friends, and fireworks! The perfect backyard cocktail! Sweet strawberries infused with spicy ginger combined with gin and club soda.
- 3 16oz containers fresh strawberries hulled & chopped
- 1 3 inch piece fresh ginger peeled & sliced
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 tablespoons champagne vinegar
- 1 tablespoon fresh lemon juice
- 1 cup gin chilled
- 3 cups soda water chilled

In 2 quart saucepan add strawberries, sliced ginger, sugar, and water. Bring mixture to a boil; reduce heat to a simmer and stir until sugar has dissolved. Remove from heat and set aside to cool. Once mixture has cooled strain into glass jar pressing on solids to get as much strawberry flavor as possible. yield should be about 1 1/4 cups.

In glass serving pitcher add cooled strawberry mixture, champagne vinegar, lemon juice, gin, and soda water. Stir to combine. Serve immediately.
