This week’s snapyoursupper ingredients are:

  • Cauliflower
  • Parsnips

Cauliflower is very deserving of its superhero status and its beautiful green cape! Great riced, turned into pizza crust or simply roasted whole. Cauliflower is an immunity boosting powerhouse food that I make a point of cooking weekly.

Parsnips usually only make an appearance in stews and braises at my house or the occasional try and fool my kids mock mashed potatoes. They don’t believe it by the way. They have a great sweetness about them and make such a silky smooth puree that I need to incorporate parsnips into my meals a little more.

I don’t know about you all but I am really getting tired of this winter that seems to drag on and on. As much as I love them I am also getting worn out with the root vegetables! Please bring on the spring and some peas mother nature!
