
This week’s snapyoursupper ingredients are:
- Poblano Chiles
- Fresno Chiles
- Anaheim Chiles
One of the most exciting culinary awakenings for me personally was being introduced to the great big world of chiles. It wasn’t until I left Iowa and moved to Philly that I spread my pepper wings. Up until that point I had really only encountered Jalapeños, and bell peppers. While lovely in their own right there was so much heat and personality I was missing.
Whilst shopping in the mini market land of $8.00 milk I stumbled upon Fresno Chiles. One bite and instead of those cartoon hearts in my eyes little tiny Fresnos filled their place. So bright, so fresh, and that knock out red color! The heat is comparable to a jalapeño but tastes less grassy to me; almost citrusy. I love Fresno chiles pickled, fresh on my sandwiches, grilled, and candied!
Poblano chiles have really won my heart for one main reason. I love Chile Rellenos! Peppers great, cheese great, melty cheese; Amazing! Poblano chilies have a small amount of heat but pack great flavor especially when roasted. Poblano and goat cheese layered with an heirloom tomato is heaven in a stack!
Anaheim chiles are very mild. I love the lime green color and the sweetness they take upon them when roasted. Charred corn salad with roasted Anaheim chiles is a favorite summer side at my house.
