With summer officially here it is time for some corn on the cob! Having spent the better part of my childhood in cornfields I am surprisingly still enamored with the sweet golden kernels. I am still very happy having a supper consisting of corn on the cob and copious amounts of butter! With two brothers who would always do a terrible job at removing the silk and therefore leaving me to do it by default I am very grateful that I no longer have to shuck the corn. I have two little helpers that are happy to do that for me as long as it leads to imminent corn consumption. 🙂 Grilled, steamed, roasted or baked into a beautiful corn pudding summer corn always is a highlight of the humid days.
Scallops are making another appearance because they are delicious, simple to prepare, nutritious, and don’t heat up my kitchen because holy goodness its hot outside!
Green apples are my second favorite apple variety behind honey crisp. They are perfectly tart for eating on their own and incredibly sturdy for pies and cobbler. Not to mention that green is my favorite color!
