When I was small the only beets I had ever tasted where the pickled variety from a jar. I used to grab a fork and go to town because I loved the tang and the bright lipstick the beets provided. 🙂 It wasn’t until I was living on my own that I started making roasted beets. I love how low maintenance they are and how they will keep forever in the fridge. I am a fan of weekly grocery shopping and I’m so happy to have fresh beets on Sunday long after all my greens have wilted. My go to method for cooking beets has alway been individual foil packets roasted in the oven. The skins just slip off and you don’t loose any nutrients to the water as you would boiling.
I love radicchio! The bitterness took a little awhile for me to come around to but if you have the perfect accompaniment radicchio can really shine. I love radicchio in slaw and fermented kimchi style.
