
This week’s snapyoursupper ingredients are:
- Duck Breast
- Ginger
- Thyme
Duck breast has always been a protein that would intimate me. I have eaten some pretty terrible duck breast before and there is nothing redeeming about tough rubber. The good news is that duck breast doesn’t have to be intimating. The key is to score the breast in a crosshatched pattern and starting in a cold pan. The cold pan allows you to slowly render the fat without over cooking the duck. I will write more detail in my recipe but you can do it!
I love fresh ginger! There really is nothing like it. Spicy, floral, and such a mainstay in so many cuisines. Now, the candied stuff. I will run from that like a snake is hot on my heels! I really dislike it! Maybe I just have not tasted a really good version so I’m open to any suggestions. 🙂
Thyme is my favorite herb. It is just beautiful and dainty to look at and smells amazing. I use it most in the fall/winter but are mushrooms even mushrooms with out thyme? I think not!
