Light and crispy cinnamon guilded cookies that are made with only 3 ingredients.
In a small bowl mix together the cinnamon and sugar. Sprinkle 2 teaspoons the cinnamon sugar mixture evenly over parchment paper.
Carefully unroll your folded puff pastry on to the parchment. Sprinkle the unfolded pastry evenly with 2 tablespoons of the cinnamon sugar mixture.
Starting with the long end facing you; roll the pastry up until you reach the middle crease.
Do the same with the other side until the two meet.
Next roll the back roll over top of the bottom roll
Refrigerate for at least 2 hours then slice into 1/2 inch slices and place on a parchment lined baking sheet at least 2 inches apart
Bake at 425 degrees for 10 minutes. Flip and then decrease temp to 400 and dust each slice with more cinnamon sugar.
Place back in the oven and cook for an additional 10-12 minutes. Watch carefully because the bottoms will burn! Remove from oven and place on a cooling rack to cool completely. Serve on their own or delicious with chocolate sauce !
